  Most of the grapes for this blend were hand-picked and delivered to our crush pad in Sonoma where they were destemmed and pumped to a temperature-controlled fermenting tank. A combination of native and wine yeast were used in the separate lots and fermentation began. Once the fermentation extracted the perfect amount of tannins from the skins, the grapes were pressed. Both free run and press juice were combined to enhance the wines structure. The wine was racked to 40% new French oak with a medium toast which enhanced and did not overpower the fruit.
