Ingredients

  • 1 sweet potato, pricked all over
  • 1 turkey breast tenderloin, 8-10 oz.
  • 1 tsp. thyme, finely chopped
  • 1⁄2 tsp. salt, divided
  • 1⁄2 tsp. pepper, divided
  • 1 tbsp. vegetable oil
  • 1 tbsp. butter
  • 1 small shallot, minced
  • 4 oz. green beans, trimmed
  • 2 tbsp. mini marshmallows
  • 2 tsp. pecans, chopped

Directions

  • Preheat oven to 375°F. Prepare a rimmed baking sheet with aluminum foil. Place sweet potato on baking sheet and bake 45-55 minutes, until easily pierced with a fork.
  • Season turkey with thyme, ¼ teaspoon salt and ¼ teaspoon pepper. In a medium skillet over medium-high heat, add oil. Sear turkey on both sides for about 5 minutes, then place on baking sheet with sweet potato. Bake 15-20 minutes, until an internal temperature reaches 165°F.
  • Transfer turkey to a cutting board and cover with aluminum foil.
  • In skillet used to sear turkey, add butter and shallot. Cook over medium heat until softened, then add green beans. Cook until crisp-tender, about 5 minutes.
  • Slice sweet potato in half lengthwise and use a fork to fluff insides. Top with mini marshmallows and pecans.
  • Serve turkey with sweet potato and green beans. Refrigerate leftovers.
