Grilled Lemon Pepper Chicken Burgers

Ingredients
- 6 tbsp. olive oil mayo
- 1 tbsp. lemon juice
- 1 tbsp. tarragon, chopped
- 3⁄4 tsp. garlic, finely grated, divided
- 1 lb. ground chicken
- 1 tsp. salt
- 2 tsp. lemon zest
- 1 tsp. freshly ground black pepper
- 4 kosher-friendly hamburger buns, toasted
- 1 1⁄2 cups baby arugula
- 1 vine-on tomato, sliced
Directions
- In a bowl, stir mayonnaise, lemon juice, tarragon and ¼ teaspoon garlic. Refrigerate until ready to serve.
- Heat grill to medium-high heat.
- In a bowl, mix ground chicken, salt, lemon zest, pepper and remaining ½ teaspoon garlic. Form mixture into 4 patties.
- Oil grill grates. Cook chicken patties 8-10 minutes, flipping once, until internal temperature reaches 165°F.
- Serve the burgers on the toasted buns with tarragon mayonnaise, arugula and sliced tomato.
- Refrigerate leftovers.
