Browned Butter Mashed Sweet Potatoes

This recipe adds a bit of russet potatoes to the mix of sweet potatoes for a side dish with a little more body than the typical mashed sweet potato. The browned butter adds a touch of nuttiness to make an easy but elevated holiday side dish.

Ingredients
- 2 pounds sweet potatoes, peeled and cut into large cubes
- 1 pound Russet Potatoes, peeled and cut into large cubes
- 1⁄2 cup butter
- 1⁄2 cup Half & Half
- 1 tsp. salt, plus more for cooking
Directions
- Place all potatoes in a large pot, cover with water and a generous amount of salt. Bring to a boil and cook for an additional 10-12 minutes or until tender. Drain and return to the pot.
- Meanwhile place butter in skillet over medium to medium-low heat.
- Stir frequently as the butter melts, bubbles and turns frothy. Continue cooking 2-3 minutes until sandy solids gather on the bottom and turn deep golden brown. Remove from heat and add half and half; set aside.
- Mash potatoes with browned butter mixture and salt until smooth.
- Refrigerate leftovers.
