Shamrock Cucumber Sandwiches

A shamrock is a three-leaf clover symbol often used in Ireland and for St. Patrick’s Day. These tasty sandwiches feature a shamrock design made using cucumbers.

Ingredients
- 4 oz. cream cheese, softened
- 1⁄2 cup monterey Jack cheese, shredded
- 1⁄4 tsp. garlic powder
- 1⁄4 tsp. salt
- 4 slices bread
- 12 slices of cucumber
- 4 slices green bell pepper
Directions
- In a small bowl, add cream cheese, shredded cheese, garlic powder and salt. Spread equally over each slice of bread.
- Place three slices of cucumber on each slice of bread in a shamrock pattern. Add a slice of bell pepper as the stem of the shamrock.
- Serve and refrigerate leftovers.
