Due to the nature of kombucha and the various ways in which it can be cultured, it’s virtually impossible to know the exact microbial composition. This can vary based on the type of water used, the brewing time, the culturing temperature, and so forth. However, what is always true to kombucha is gluconic acid, acetic acid, and fructose.
The bacteria and yeast strains in kombucha are what make it fizz and make it taste a tad tangy. These unique features are what makes it perfect as a refreshing beverage, as well as a substitute for vinegar in salad dressing and condiments. Its acidity is useful in meat marinades and even cocktail recipes. Perhaps most surprising is kombucha’s role in hair care. If your kombucha becomes too acidic to drink, simply mix it 1:1 with water and use as a conditioner -just be sure to rinse thoroughly!

What will I need to get started?
- 1 packet dehydrated kombucha SCOBY (in this box)
- 2-3 cups filtered water, bottled spring water or any water free of chlorine and fluoride
- ¼ cup white sugar
- 2 black tea bags or 1-1/2 tsp. loose tea
- ½ cup distilled white vinegar
- Quart-size glass jar
- Thermometer
- Coffee filter or tight-weave cloth
- Rubber band
