  Black Diamond Cheese is the master of the natural aging process. With each passing year the cheese matures, developing new textures and appearances, complemented by changes in flavor and aroma. Black Diamond Vintage Reserve is age 5 years. In 1881 local dairy farmers in Perth, Canada pooled their excess milk production and built a small, wood-framed factory. Over a century later, the Black Diamond brand continues to make the same cheddar with craftsmanship, dedication, and pride. Like a fine wine, cheddar requires quality ingredients, and the palate of a master craftsman, as well as years of careful aging.
