Tomato and Pesto Flatbread
A premade ball of pizza dough and store-bought pesto makes this Tomato Pesto Flatbread a super-easy treat to prepare. Pro-Tip: Baking the tomatoes in advance means you won’t end up with soggy crust!

Ingredients:
- 1 lb. Harris Teeter Fresh Foods Pizza Dough, brought to room temperature
- 1 container Harris Teeter Fresh Foods Basil Pesto
- 1 Tbsp. Harris Teeter Extra Virgin Olive Oil
- 4 large vine-ripe tomatoes
- 1 ½ cups Harris Teeter Shredded Mozzarella Cheese
- Fresh Basil Leaves
Directions:
- Preheat oven to 400 degrees Fahrenheit.
- Slice tomatoes into thin rounds. Place them on a baking rack inserted on a rimmed baking sheet. Sprinkle with salt and bake, about 6 minutes, or until moist of the seeds and excess moisture has baked out.
- Meanwhile, roll out dough onto a greased pizza tray. Place in the oven and bake, about 8-9 minutes, or until lightly golden.
- Remove the pizza from the oven and spread pesto sauce on crust. Top with mozzarella, then return to the oven for five minutes. Remove from the oven and place the baked tomatoes on top. Return to the oven until the pizza crust is deeply golden, the cheese is melted and bubbly, and the tomatoes are warmed through.
- Remove from the oven and garnish with basil before slicing and serving.

Ingredients:
- 2 racks of prepared Harris Teeter Fresh Foods Baby Back Ribs
- 1 lb. Harris Teeter Elbow Pasta
- 4 Tbsp. Harris Teeter Butter, divided
- 2 Tbsp. Harris Teeter All-Purpose Flour
- 3 cups Harris Teeter Half & Half
- 2 ½ cups Harris Teeter Shredded Cheddar Cheese
- Salt and pepper to taste
Directions:
- Remove rib meat from the bones and set aside. Discard the bones.
- Use 2 Tbsp. of the butter to grease a 9x13 baking dish.
- Bring a large pot of salted water to a boil, then cook the noodles according to package directions. Drain.
- Melt the remaining butter in the emptied pasta pot. Sprinkle the flour on top and whisk constantly, until smooth and forms a light brown paste.
- Slowly pour in the half and half, stirring constantly. Whisk until smooth, until the mixture begins to thicken and bubble. Remove the pot from the heat and stir in the cheese (reserving ½ cup), salt and pepper.
- Add the macaroni and rib meat into the pot and stir to combine. Preheat the broiler.
- Pour the mixture into the prepared baking dish and sprinkle with the reserved cheese. Put it in the broiler and bake until golden on top, about 4-5 minutes.
- Remove from heat and let rest five minutes before serving.
