Bacon & Cheese Hash Brown Foil Packets

If standing over a stove doesn’t sound like your idea of morning fun, try cooking up your breakfast in a foil packet. On the grill or in the stove, our Bacon & Cheese Hash Brown Foil Packets bring big flavor and with little clean up, so you can get on with your day!

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: 6 servings

Ingredients:

  • 1 30 oz. bag of Harris Teeter Shredded Hash Brown Potatoes
  • 12 oz. cooked Harris Teeter Premium Bacon, crumbled
  • 3 Tbsp. Harris Teeter Olive Oil
  • 1 ½ cups Harris Teeter Fancy Shredded Cheddar Cheese
  • Salt and pepper, to taste
  • Garnish: chopped fresh parsley or chive

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit or heat a grill to medium high.
  2. In a large bowl toss together the hash browns, bacon, olive oil, and season with salt and pepper.
  3. Cut six sheets of heavy-duty aluminum foil, about 12 inches long. Spray lightly with cooking spray.
  4. Divide the hash brown mixture into six equal portions and place in the middle of each foil sheet. Sprinkle each packet with cheese.
  5. Fold up all four sides of each packet, to cover completely, and seal the packets closed.
  6. Place packets on a sheet and put in the oven if baking or place the packets directly on the grill. Cook for 20-25 minutes, or until the cheese has melted and the potatoes are cooked through.
  7. Carefully open the packets, and garnish with herbs if desired. Serve immediately.

Shrimp Boil Foil Packets

Whether you’re at the beach or just wish you were, these Shrimp Boil Foil Packets make it easy to make a seafood boil without the mess. Made in individual packets, you can customize each packet to your preference, and scale the recipe up or down to serve as your crew.

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 4 servings

Ingredients:

  • 1 pound Harris Teeter Peeled and Deveined Shrimp, thawed if frozen
  • 12 ounces Smoked Sausage, sliced into 8 pieces
  • 1 pound small red or yellow potatoes, halved
  • 2 ears of corn on the cob, chopped 4 rounds each
  • ½ onion, thinly sliced
  • 2 cloves of garlic, minced
  • 4 Tbsp. Harris Teeter Butter, melted
  • 1 tsp. salt
  • ½ tsp. pepper
  • 2 Tbsp. Old Bay seasoning

Garnish: chopped fresh parsley, sliced lemons, melted butter, hot sauce

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit or your grill to medium-high heat.
  2. Bring a large pot of water to a boil. Drop in the chopped potatoes and corn. Reduce the heat to a simmer and cook for ten minutes. Drain in a colander and set aside.
  3. Meanwhile, make 4 sheets of 12x24 inch aluminum foil sheets. Fold in half to form a square and fold up the edges slightly.
  4. In a large bowl, combine drained potatoes and corn, sausage, shrimp, onion, and garlic. Drizzle with 4 Tbsp. of melted butter, then season with salt, pepper, and Old Bay. Mix well to coat.
  5. Divide the ingredients evenly between the four sheets then seal the packets, ensuring they are tightly closed.
  6. If baking, place them on a baking sheet and put in the oven. If grilling, place them directly on the grill. Cook for 15 minutes, flipping halfway through.
  7. Open the packets carefully before serving, and serve with chopped herbs, lemon slices, additional melted butter, and hot sauce if desired.

Sausage and Summer Veggie Foil Packets

Cook Time: 25 minutes

Total Time: 45 minutes

Yield: 4 servings

Ingredients:

  • 1 red bell pepper, sliced into strips
  • 2 ears of corn, each cut into 4 coins
  • 1 medium onion, thinly sliced
  • 6 small potatoes, cut into small cubes
  • 1 large zucchini, cut into ½ inch coins
  • 1 package smoked sausage, cut into ½ inch coins
  • 4 Tbsp. Harris Teeter Extra Virgin Olive Oil
  • 1 Tbsp. each: dried oregano, dried parsley,
  • 1 Tsp. each: smoked paprika, garlic powder, salt
  • Garnish: Parmesan cheese, chopped fresh parsley

Directions:

  1. Preheat the oven to 425 degrees Fahrenheit or your grill to medium-high heat. Prepare 4 18” heavy duty sheets of aluminum foil and spray with cooking spray.
  2. Add prepared veggies and sausage to a large bowl and add oil and seasonings. Mix well to coat.
  3. Divide the mixture amongst your prepared packets. Fold up the packets to seal tightly.
  4. If grilling, place directly on the grill and cook for 25-30 minutes, flipping halfway through. If baking, place on a baking sheet and cook for 30-35 minutes, flipping half way through.
  5. Carefully open the foil packets and garnish with Parmesan and herbs, if desired.

Chicken Parm Foil Packets

Making a Chicken Parm has never been easier. Cooked on the grill or in the oven in tidy foil packets, and topped with ooey-gooey mozzarella cheese, this recipe will be a family-favorite for years to come.

Total Time: 35 minutes

Ingredients:

  • 4 Harris Teeter Boneless, Skinless Chicken Breasts
  • 3 cups Harris Teeter Marinara Sauce, divided
  • 2 zucchini, sliced into ½ inch coins
  • ½ cup Harris Teeter Shredded Parmesan Cheese, divided
  • 1 cup Harris Teeter Fancy Shredded Mozzarella Cheese
  • 1 tsp. each: garlic powder, Italian seasoning, salt
  • ¼ cup olive oil
  • 1 lb. Harris Teeter Spaghetti, cooked
  • Garnish: chopped fresh parsley, additional Parmesan cheese

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit or a grill over medium-high heat. Spray four 12x18 pieces of heavy duty aluminum foil with cooking spray.
  2. Divide zucchini coins between the four packets and sprinkle with half of the garlic powder, Italian seasoning, salt, and 2 Tbsp. of the Parmesan cheese.
  3. Divide 1/3 cup of marinara sauce and add to the top of the seasoned zucchini.
  4. Place a chicken breast on top of the sauce and sprinkle with the remaining seasonings. Seal each packet.
  5. Place on a baking sheet if cooking in the oven or directly on the grill, chicken side down. Cook for 18-20 minutes, flipping halfway through. The packets are done when the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  6. Open each packet by slicing with a knife and sprinkle the ¼ cup mozzarella cheese on top. Return to heat until melted.
  7. Meanwhile, cook spaghetti according to package directions and drain.
  8. Warm the remaining marinara sauce.
  9. Divide the pasta amongst four plates. Place cooked chicken and zucchini on top of each plate of pasta and pour out any extra sauce onto the plate.
  10. Garnish with additional cheese and parsley if desired.

Caramel Apple Cobbler Foil Packets

Easier than pie! Our Caramel Apple Cobbler Foil Packets are easy to assemble, simple to cook, and leave no clean up! Perfect for outdoor barbecues or camping trips, but can be made in the oven, too.

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: 4 servings

Apple Layer Ingredients:

  • 2 large Honeycrisp apples, diced into ¼ inch cubes
  • 1 Tbsp. Harris Teeter Butter, cut into 1/8” cubes
  • ¼ cup Simple Truth Organic Light Brown Sugar
  • 2 Tbsp. Harris Teeter Sugar
  • 2 tsp. cornstarch
  • 1 tsp. Harris Teeter Ground Cinnamon
  • ½ tsp. pumpkin pie spice

Crumble Topping Ingredients:

¼ cup Harris Teeter Butter, cut into 1/8” cubes

  • ¼ cup Simple Truth Organic Light Brown Sugar
  • ¼ cup Harris Teeter Old-Fashioned Rolled Oats
  • ¼ cup Harris Teeter All-Purpose Flour
  • 1 tsp. Harris Teeter Ground Cinnamon
  • ½ tsp. pumpkin pie spice

Optional Garnish: caramel sauce, whipped cream and Harris Teeter Vanilla Ice Cream

Directions:

  1. Preheat your oven to 450 degrees Fahrenheit or a grill to high heat. Place two large aluminum foil sheets on the counter and spray with cooking spray.
  2. In a medium bowl, add all apple layer ingredients. Use a fork to cut the butter into the mixture, then distribute the apple mixture between the two sheets.
  3. In the same bowl, add the crumble topping ingredients, and stir to combine. Use a fork to cut the butter into the mixture then sprinkle on top of the apples.
  4. Seal up the packets tightly to trap the steam in. Cook in the oven for up to 15 minutes or the grill for up to 10 minutes. You’ll want to check every five minutes to ensure it doesn’t burn.
  5. Allow the packets to rest five minutes, open up carefully, then top with caramel sauce, whipped cream, or ice cream if desired.
