Family Baking Recipes for Rainy Days

Rain, Rain, Go Away! But if the rain persists, no biggie - we’re baking!

When bad weather keeps you inside, it might as well smell like fresh-baked bread. And, making that bread may as well keep the kids entertained. With recipes like Bread in a Bag and our DIY Donut Crispy Treats, you’ll keep the kids occupied and fed… double winning!

Let little kids help pour, stir and mix. Older children can measure and work on basic knife skills. It’s science, math, and home economics all rolled into one delicious afternoon.

Bread in a Bag

If you’re going to be stuck inside on a rainy day, you may as well have the home smell like fresh-baked bread! Enlist the kids to help make the easy-to-make Bread-in-a-Bag recipe. They’ll love shaking and kneading the dough! Make sure you purchase Harris Teeter brand ingredients to earn money for your school while baking. 

Prep Time: 1 hour, 15 minutes (includes proofing time)

Cook Time: 25 minutes

Total Time: 2 hours

Yield: 1 loaf

Ingredients:

  • Harris Teeter 1 Gallon Resealable Storage Bag
  • 3 cups Harris Teeter All-purpose Flour
  • ¼ cup Harris Teeter Sugar
  • 2 ¼ tsp. rapid rise yeast
  • 1 cup warm water
  • ¼ cup Harris Teeter Butter, melted
  • 1 tsp. salt

Directions:

  1. Add 1 cup flour, sugar, and yeast to the gallon-sized plastic bag. Add warm water and seal, pressing out extra air.
  2. Shake and mix the bag with your hands. Once well mixed, allow the bag to rest 10 minutes to proof.
  3. Open the bag and add in one more cup of the flour, the salt and the melted butter. Seal the bag, pressing out the extra air. Shake and mix again.
  4. Open the bag and add in the last cup of flour. Seal the bag, pressing out the extra air. Shake and mix again.
  5. Remove the dough from the bag and place on a clean and floured surface. Knead for 5 minutes then place in a greased loaf pan. Cover with a towel and place in a warm place to rise for 35-45 minutes so the dough can rise. Meanwhile, preheat the oven to 375 degrees Fahrenheit.
  6. Bake the loaf for 25 minutes. Allow to cool before storing or slicing.

DIY Donut Crispy Treats

Make a simple batch of crispy treats, then cut them into donut shapes for little ones to decorate. Our DIY Donut Crispy Treats make the perfect rainy day activity!

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: Six ‘donuts’ and 1 dozen ‘donut’ holes

Ingredients:

  • 10.5 oz. package of Harris Teeter Mini Marshmallows
  • 3 Tbsp. Harris Teeter Salted Butter
  • 6 cups Harris Teeter Crispy Rice Cereal
  • 1 tsp. Harris Teeter Vanilla Extract
  • Decorate with: icing and sprinkles

Directions:

  1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Pour in vanilla and mix.
  2. Fold in the cereal and stir to coat. Pour into a greased 9x13 pan.
  3. Allow to cool completely before cutting out 4 inch circles with a cookie cutter. Cut the holes of the donuts out with a 1 inch circle cookie cutter. Cut smaller circles out where there is space.
  4. Place shapes on a wire cooling rack on top of a rimmed baking sheet. Decorate as desired!

S’more Hand Pie Pops

S’more Hand Pies. On a stick. These S'more Hand Pie Pops are the perfect portable S’mores treats for little hands. And, adults too!

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 20 minutes

Yield: 1 dozen pops

Ingredients:

  • 1 package (2 count) Harris Teeter Refrigerated Pie Crust, room temperature
  • 2 of your favorite milk chocolate bars, divided into squares
  • Harris Teeter Mini Marshmallows
  • 1 egg, beaten
  • 12 lollipop sticks

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Remove the crusts from the package and roll flat. Cut out 12 circles from each crust. Place 12 circles on a greased baking sheet and brush with egg.
  3. Press a lollipop stick into each circle. Add a chocolate and 2 marshmallows to each circle.
  4. Place a second circle on top. Use a fork to crimp around the edges. Brush the tops with egg.
  5. Bake for 20-25 minutes, or until golden brown. Allow to cool slightly before enjoying.

Mini Fruit Pies

These Mini Fruit Pies made in cupcake tins are a cute baking craft for the kids. Mix and match your favorite fillings for fun flavor combos!

Show these pies to your teachers (in person or on video) and ask them if they have linked their VIC cards to their school through Harris Teeter’s Together in Education program. 

Prep Time: 35 minutes

Cook Time: 40 minutes

Total Time: 1 hour 15 minutes

Yield: 12 mini pies

Ingredients:

  • 2 (2 count) Harris Teeter Refrigerated Pie Crust, room temperature
  • 2 – 21 ounces cans of Harris Teeter Pie Filling
  • 1 egg, beaten

Directions:

  1. Preheat oven to 350 degrees Fahrenheit. Grease a 12-count cupcake tin with cooking spray.
  2. Roll out a two of the pie crusts and cut out 12 four-inch circles. Press each dough circle into a muffin cup.
  3. Fill each cup with ¼ cup filling, nearly to the top.
  4. Use the remaining dough to cut out thin strips of dough, then lace on top to create a lattice.
  5. Use a pastry brush to brush to the top of each pie with the beaten egg.
  6. Bake 30-40 minutes, or until the crust is lightly golden and the filling begins to bubble.
  7. Remove from heat to cool. Run a knife around each pie before gently lifting out. Serve with whipped cream or ice cream, if desired.
