Comfy Casseroles: Recipes for Family Dinner

Casseroles are the original one-pot meal.  Throw in some cooked meat, whatever veggies you have on hand and something creamy… voila!  You have dinner for a crew.

These recipes aren’t your grandma’s casserole recipes, though.  Loaded with Simple Truth Organic ingredients and no condensed soups, you’ll find the upgraded classics you’ll want to make often. Like a creamy mashed potato dish loaded with creamy cheeses and crispy bacon.  And, a Tex-Mex inspired ground beef casserole topped with everyone’s favorite: crispy tater tots!  Or try something totally different – like our polenta casserole topped with ham, fresh kale, and perfectly cooked eggs.

Loaded Mashed Potato Casserole

Mashed potatoes are typically something you have to make last minute, but not with this no-fuss recipe!  Our Loaded Mashed Potato Casserole is bursting with cheese, sour cream, bacon, and scallions for a beautiful side dish that goes with almost anything!

  • Prep Time: 30 minutes
  • Cook Time: 40 minutes
  • Total Time: 1 hour, 10 minutes
  • Yield: 6-8 side servings

Ingredients:

  • 3 pounds Harris Teeter Russet Potatoes, peeled and cut into 1 ½” cubes
  • ¾ cup Simple Truth Organic 2% milk
  • 4 Tbsp. Simple Truth Organic Salted Butter
  • 1 cup Simple Truth Organic Sour Cream
  • 2 cups Simple Truth Organic Shredded Cheese, divided
  • 6 slices Simple Truth Organic Bacon, cooked and crumbled
  • ¼ cup sliced scallions
  • Salt and pepper, to taste

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit.  Grease a 2-quart baking dish and set aside.

  2. Add cubed potatoes to a large pot of salted water.  Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

  3. Drain the potatoes and return to the pot with milk, butter, sour cream, 1 cup of the cheese, and salt and pepper to taste.  Mash completely.

  4. Pour the mixture into the prepared baking dis.  Sprinkle with the remaining cheese.  Cover the pan and bake for 20 minutes.

  5. Remove the pan from the oven and take off the foil.  Sprinkle the bacon on top and return to the oven, uncovered, to bake for another 20 minutes, or until the cheese has melted and the potatoes are golden and bubbly.

  6. Garnish with scallions and serve immediately.




Greens, Eggs, and Ham Polenta Casserole

Cheesy, creamy polenta is topped with perfectly cooked eggs, crisped up ham and fresh greens in this breakfast for dinner (or really, anytime) casserole.  Make this casserole the next time you want to impress!

  • Prep Time: 15 minutes
  • Cook Time: 20 minutes
  • Total Time: 35 minutes
  • Yield: 8 servings

Ingredients:

  • 1 cup Harris Teeter Quick Cooking Grits or instant polenta
  • 1 cup Simple Truth Organic Whole Milk
  • 2 Tbsp. Simple Truth Organic Unsalted Butter
  • ½ cup Simple Truth Organic Shredded Mozzarella
  • 5 ounces Simple Truth Organic Sliced Ham
  • 1 cup fresh kale leaves, torn
  • 8 Simple Truth Organic Large Eggs
  • ½ cup Simple Truth Organic Parmesan Cheese
  • Salt and Pepper, to taste

Directions:

  1. Preheat the oven to 400 degrees Fahrenheit.  Grease a 9x13 casserole dish and set aside.

  2. In a large saucepan, bring 4 cups of water to a boil.  Slowly whisk in polenta and stir constantly until the mixture is smooth, begins to bubble and pulls away from the pan.  It will take about 3 minutes.

  3. Stir in the milk, butter, and mozzarella until smooth and creamy.  

  4. Pour the mixture into the prepared pan.  Layer with meat and kale.  

  5. Use the back of a spoon to make 8 small wells into the polenta.  Break an egg into each depression.  Sprinkle the casserole with Parmesan, and salt and pepper, to taste.

  6. Bake for 10-15 minutes, or until the eggs are cooked to your preference.  

  7. Let stand 5 minutes, then serve warm.



Cowboy Tater Tot Casserole

Ingredients:

  • 1 lb. lean ground beef
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 14 oz. Simple Truth Organic diced tomatoes, drained
  • 1 cup Simple Truth Organic Sour Cream
  • 4 ounces Simple Truth Organic Cream Cheese
  • 12 oz. Simple Truth Organic Frozen Corn
  • 2 cups Simple Truth Organic Shredded Cheese
  • 1 package Simple Truth Organic Potato Puffs
  • Salt and Pepper, to taste

Directions:

  1. Preheat the oven to 425 degrees Fahrenheit.  Grease a 9x13 baking dish and set aside.

  2. In a large skillet brown beef until almost no more pink remains.  Add the onion and garlic and cook until softened and the beef is completely cooked through.

  3. Stir in the tomatoes, sour cream, cream cheese, corn and shredded cheese.  Season with salt and pepper.

  4. Pour the mixture into the prepared casserole and arrange the tater tots on top.  

  5. Bake for 25-30 minutes, or until the mixture is hot and the tater tots are golden and crispy.


Fiesta Chicken Noodle Casserole

Your favorite Tex-Mex flavors meet in this casserole loaded with chicken, noodles, and veggies - and is then topped with crunchy tortilla chips and cheese!  Move over taco Tuesday!  This one-dish meal will become your new weekly tradition.

  • Prep Time: 20 minutes
  • Cook Time: 40 minutes
  • Total Time: 1 hour
  • Yield: 6-8 servings

Ingredients:

  • 2 cups uncooked Simple Truth Organic Rotini
  • 1 cup Simple Truth Organic Sour Cream
  • 1 cup Simple Truth Organic Salsa
  • 1 tsp. ground cumin
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 12 oz. Simple Truth Organic Frozen Corn
  • 15 oz. can Simple Truth Organic Black Beans, drained
  • 2 cups rotisserie chicken, shredded
  • 2 cups Simple Truth Organic Shredded Mexican Cheese
  • 2 cups Harris Teeter Tortilla Chips, crumbled
  • Garnish: sliced Private Selection Tomatoes, and chopped scallions

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit.  Grease a 9x13 casserole dish and set aside.

  2. Cook pasta according to package directions and drain.  While pasta is cooking, combine sour cream, salsa, and spices in a large mixing bowl.

  3. Add drained pasta, corn, black beans, chicken, and half of the cheese.  Fold to combine and pour into the prepared dish.  Top with crumbled chips and the remaining cheese.

  4. Cover with foil and bake for 30 minutes.  Remove the foil and cook another 5-10 minutes or until golden and bubbling.

  5. Remove from the oven and garnish with fresh tomato and scallions, if desired.  Serve immediately.
