Hummin Greens Pizza

Ingredients:
1 Harris Teeter Farmers Market large tomato
3 cloves garlic
2 tsp. each basil, parsley, oregano
2 tsp. H.T. Traders extra virgin olive oil, divided
1/2 yellow or white Harris Teeter Farmers Market onion
1 bunch rainbow Swiss chard (or 1 lb. greens of your choice)
1/4 cup water
1 Tbsp. H.T. Traders balsamic vinegar
1 Harris Teeter Fresh Foods Market pizza dough
1/4 cup Harris Teeter shredded Parmesan cheese
2 (10 oz.) Harris Teeter Fresh Foods Market smoked paprika hummus

Directions:
Preheat oven at 400° F. Cut top off of the tomato and loosen insides with a spoon. Mince garlic and place 2 cloves inside tomato. Mix basil, parsley and oregano and sprinkle half of mixture into tomato. Use 1/8 tsp. of the olive oil to grease a small baking dish the size of the tomato, and approximately 1 tsp. to drizzle over the tomato (both inside and outside). Roast the tomato for 20 minutes or until the inside bubbles and the skin begins to fall apart. Meanwhile, quarter and slice the onion and chop the stalk of the Swiss chard. Sauté with remaining olive oil on medium high heat for about 3 minutes or until onion is translucent. Add 1 clove garlic and sauté for 1 minute. Slice the chard in half along the stem. Roll tightly and slice in 1/2 inch strips. Place in sauté pan with rest of the ingredients and add water. Drizzle vinegar over chard, cover and reduce heat to low and let simmer for 5 minutes. Remove tomato from oven and add to greens, breaking tomato apart with spoon before stirring. Flour cool surface and roll dough until size of 12” round pizza greased sheet. Fit dough to the pizza sheet and roll edges to make crust. Sprinkle half of Parmesan cheese and remaining spices over dough. Bake for 10 minutes or until golden brown. Remove pizza dough and let cool approximately 20 minutes.

Assemble by spreading hummus over pizza, then add greens and sprinkle rest of parmesan cheese over the top. Cut into quarters.

Egg White Frittata

Ingredients:
6 Harris Teeter egg whites
1 cup Harris Teeter spinach, chopped
1/2 cup Harris Teeter Farmers Market cherry tomatoes, halved
1/2 cup Harris Teeter Farmers Market onion, diced
1/4 cup Harris Teeter Farmers Market bell pepper, diced (any color)
Dash of hot sauce (optional)
1/8 tsp. Harris Teeter salt
1/8 tsp. Harris Teeter ground pepper
1 tsp. H.T. Traders olive oil
4-5 leaves fresh basil, finely chopped (cilantro and parsley work as well)

Directions:
Heat olive oil in non-stick skillet over medium high heat. Chop the spinach, tomatoes, onion, and bell pepper, and add them to the hot oil. Add salt and pepper and sauté for 3 minutes or until onions are soft, stirring constantly. Beat egg whites with wire whisk until bubbly (about 30 seconds). This is a good arm workout, too! Add the egg whites to the skillet and cover. Let cook 2 minutes or until eggs are cooked through. Release the bottom of the frittata from the skillet with a spatula, and put on a large plate. Top with chopped basil (or other favorite herb). Enjoy an easy, inexpensive, protein-packed, veggie-rich breakfast, lunch, snack, or dinner!

Mango Chicken Salad with White Beans

Ingredients: 
1 can Harris Teeter Naturals Organic Northern (or Navy) Beans, rinsed and drained
2 Harris Teeter Farmers Market mangos, peeled and diced
1 Harris Teeter Farmers Market seedless cucumber, diced
1 bunch Harris Teeter Farmers Market scallions, white and green portions thinly sliced
2 cups shredded Harris Teeter rotisserie chicken (about 1/2 chicken)
2 Tbsp. Harris Teeter red wine vinegar
1 Tbsp. fresh lime juice
2 Tbsp. H.T. Traders extra virgin olive oil
2 cloves Harris Teeter Farmers Market garlic, peeled and minced
1 small Harris Teeter Farmers Market jalapeño, seeded and finely minced
1 tsp. H.T. Traders Dijon mustard
2 tsp. H.T. Traders honey
1/2 tsp. kosher salt
1/2 tsp. Harris Teeter ground pepper
4 cups Harris Teeter Farmers Market baby spinach

Directions: 
In a large bowl, combine white beans, diced mango, diced cucumber, sliced scallions, and shredded chicken. In a jar with tight-fitting lid, combine red wine vinegar, lime juice, olive oil, minced garlic, minced jalapeño, Dijon mustard, honey, salt and pepper. Screw on the lid and shake well to emulsify. Pour about 3/4 of dressing over salad, toss to coat, cover and refrigerate at least 20 minutes. To serve, toss remaining dressing with baby spinach, divide between 4 plates, and top with chilled chicken salad.

Makes 4 entree servings

Gale's Veggie Meatloaf

Ingredients: 
12 oz. bag of frozen mixed peppers and onions, chopped
2 cloves garlic, finely chopped
10 oz. firm tofu, drained well
1/4 cup Harris Teeter walnuts, finely chopped
12 oz. vegetarian meat crumbles
1 cup whole wheat bread crumbs (or one-minute oats)
3 Tbsp. H.T. Traders Reduced Sodium Soy Sauce 
2 Tbsp. Harris Teeter ketchup
1 Tbsp. H.T. Traders Dijon mustard
1 Tbsp. Italian Seasoning
2 Tbsp. ground flax, if desired

Directions:
Preheat oven to 375° F. Spray a loaf pan or rub with oil. Sauté the peppers, onions, and garlic in a sprayed skillet until tender, about 5 minutes. Remove from heat. Mash the tofu in a large bowl. Stir in the peppers, onions, and garlic mixture. Add the remaining ingredients and mix well. Spoon the mixture into the sprayed loaf pan. Bake for 55 minutes until a toothpick inserted in center comes out clean.

Serves 6. 

Optional Gravy:
Ingredients:
1 can of Campbell’s Healthy Request Cream of Mushroom Soup
1/2 can of water
1 veggie beef bouillon
Italian seasoning to taste

Directions: 
Heat 1/2 can of water in medium saucepan until it boils. Add bouillon and stir till dissolved. Stir in Cream of Mushroom Soup, and Italian seasoning. Simmer for 2 minutes. To thin gravy, add a little more water if desired.

Corn-Black Bean Salsa

Ingredients: 
1 (15 oz.) can Harris Teeter Naturals Organic black beans, rinsed and drained
1 cup frozen Harris Teeter Naturals Organic corn kernels, thawed
1/2 cup Harris Teeter Farmers Market red bell pepper, chopped
1/2 cup fresh cilantro, chopped
8 green Harris Teeter Farmers Market onions, sliced
3 Tbsp. lime juice
2 Tbsp. H.T. Traders balsamic vinegar
1/2 tsp. Harris Teeter ground cumin
1/4 tsp. Harris Teeter salt

Directions: 
Combine all ingredients. Serve with tortilla chips. Refrigerate up to 3 days.

Oaties (Oatmeal Cookies)

Ingredients:
2 Tbsp. H.T. Traders olive oil
pinch of Harris Teeter salt
pinch of Harris Teeter baking powder
1 Harris Teeter egg
1 1/2 cups of Harris Teeter milk
2 cups Harris Teeter brown sugar
4 cups Harris Teeter flour
2 1/2 cups Harris Teeter oatmeal
1/2 cup of flaxseeds
(optional) add nuts, seeds, etc

Directions:
Preheat oven to 375° F. Mix all ingredients in a large bowl. Place cookies on cookie sheet and bake for 12 minutes or until golden brown. Let cool 10 minutes. 

Yield: 48 cookies
